Founded in 2015 by food veterans Kaushik Roy and Vishal Jindal, BBK was launched with an intent to
preserve the Khansama style of cooking wherein the biryani is freshly cooked with rich ingredients,
unlike other brands where the food is cooked in bulk and repackaged & sold.
BBK currently has a total of 11 outlets in India across Delhi-NCR and Mumbai. The restaurant chain is
looking to expand its footprint in the domestic market by opening over 20 stores in metros by March

individual earthen Handis with the freshest ingredients. Also the Kolkata Biryani which is a sub variant of
Lucknowi Biryani. BBK is the only Biryani Chain to make Biryani fresh for every individual order, and
deliver it in the Handi in which it was cooked. To take your Biryani experience a notch higher, they send
you earthen Angeethis (Aanch) with each order to give the last bit of dum for the perfect smoky flavor
and aroma of spices when you dig in to your Biryani. For the Galouti Kebabs, BBK minces the meat
multiple times, and marinates them in the most authentic way, to make them surely melt in your mouths

BBK strive towards inclusive growth & environment friendly approach.They work closely with potters at
Kumhaara Gram on the outskirts of Delhi to develop our hand made pots/handis for making biryanis.
BBK cut across the middlemen and ensure that the potters get their due share of the efforts. Also BBK
Biryanis are cooked in the same Handis in which they are delivered, ensuring best freshness & hygiene.

The Biryani Menu
A sure shot attention grabber at every gathering. Our mini Angeethis provide those extra 8-10 minutes of
dum to your Biryani right before serving and it gives the perfect smoky flavour and aroma of spices when
you dig in to your Biryani.
Biryani is prepared in an earthen pot called Handi, the rice and meat are layered, bottom and top layer
are always rice. An interlayer of some condiments is introduced between the meat and the rice.
Hyderabadi Biryani is the kachay gosht ki Biryani or the dum Biryani, where the meat is marinated and
cooked along with the rice. It is left on slow fire or dum for a fragrant and aromatic flavour.
Lucknow or Awadhi din Biryani is a pakki Biryani. The rice and meat are generally partially cooked
separately in spiced water, then layered and cooked by the dum pukht method.
Kolkata Biryani is much lighter on spices and uses potato & egg to enhance its flavour. It is a sub variant
of Lucknowi style of Biryani.

THE GALOUTI KEBABS
Galouti is a Lucknowi specialty made by marinating the finely ground meat. After mixing with herbs and
exotic spices, the very finely ground meat is shaped roundly and fried in pure ghee until it is browned.
For the Galouti Kebabs. BBK minces the meat multiple times and marinates them in the most authentic
way to make them surely melt in your mouths & hearts.
